Range developed with the aim of expressing the best of the Mentone terroir.
After hand harvesting, the winemaking follows a minimalist process, with the grape must fermenting thanks to indigenous yeasts. These "semi-gastronomic" wines are aged on fine lees to perfect their tasting qualities. They are characterized by a great aromatic complexity and remarkable mouthfeel. They can accompany meals from appetizers to dessert.

Winemaking Process: Organic cultivation. Manual and mechanical harvesting. Full de-stemming. Fermentation in temperature-controlled stainless steel tanks. Use of indigenous yeasts. Direct pressing. Aging in temperature-controlled stainless steel tanks, aging on lees. Technical cork stopper. Clay-limestone soils.
Eye: Pale pink color with salmon reflections.
Nose: Aromatic, fruity, with notes of apricot, peach, and yellow fruits.
Palate: Aromatic, generous, full-bodied, with citrus notes, peach notes, iodine notes, smooth tannins, round, structured body, good intensity, and good persistence.
Food & Wine Pairing: Grilled fish, grilled white meats, vegetable fritters (zucchini, eggplants...), paella, red fruit desserts.
Serving Temperature: 10° - 12°C
